Pumpkin Spice Walnut Loaf

Fall weather means pumpkin spiced everything! Try this pumpkin spice walnut loaf, which is gluten-free, packed with protein and heart healthy walnuts, and all the class flavors of fall including cinnamon, ginger and nutmeg.  
Servings: 13 slices

Ingredients

  • 6 eggs or egg substitute*
  • 1 2/3 cups unsweetened applesauce
  • 2 cups pumpkin puree
  • 1 1/3 cups sugar
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp ginger
  • 1/2 tsp clove
  • 1/2 tsp nutmeg
  • 1 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 2 1/4 cups gluten free flour
  • 6 scoops Orgain Organic Pumpkin Spice Protein Powder
  • 1 cup chopped walnuts

Instructions

  • Stir all dry ingredients together and set aside
  • Mix sugar, eggs, applesauce and pumpkin together in a bowl with a whisk.
  • Add dry ingredients and mix until smooth.
  • Pour batter into a loaf pan and bake at 350 degrees in oven until cake tester comes out clean (about 45-60 minutes)

Note: To make this recipe nut-free remove walnuts
