Peppermint Hot Cocoa Protein Fudge Bars

Celebrate the season with this healthier twist on two holiday classics, peppermint bark and hot cocoa! Orgain’s Peppermint Hot Cocoa Protein Powder combines perfectly with dates and a few kitchen staples to create this no-bake, gluten-free, family favorite treat.
Servings: 6 bars

Ingredients

  • 2/3 cup Organic Protein™ Plant Based Protein Powder – Peppermint Hot Cocoa
  • 4 pitted dates
  • 2 tbsp coconut oil
  • 4 tbsp unsweetened almond milk
  • 1/4 cup Greek yogurt*
  • 1/2 tsp mint extract
  • 1/3 cup almond flour
  • 2 tbsp cocoa powder
  • 1/4 cup dark chocolate chips*
  • 1/4 cup white chocolate chips*
  • 1/4 cup crushed peppermint candies

Instructions

  • To a food processor fitted with a metal blade or high-powered blender, add the dates, coconut oil, unsweetened almond milk, Greek yogurt, mint extract and pulse until smooth, wiping down sides with a spatula as needed.
  • Transfer the batter into a bowl, then mix with Orgain Organic Protein™ Plant Based Protein Powder Peppermint Hot Cocoa, almond flour, and cocoa powder until smooth. If dough becomes thick, add 1 teaspoon of almond milk at a time to help ensure all dry ingredients are mixed. 
  • Line a loaf pan (9-inch x 5-inch) with parchment paper, then firmly press the dough into the pan until evenly distributed. Place in the freezer for at least an hour.
  • When ready to apply topping, heat chocolate chips and white chocolate chips in small glass bowls in the microwave in 15-second intervals until melted. 
  • Drizzle each type of chocolate on top of the fudge in the loaf pan, then top with peppermint pieces. 
  • Place back in the freezer for another 30 minutes for chocolate to harden, then cut into desired number of servings. 
  • Serve immediately.
  • Store remaining fudge bars in the refrigerator and use within 10 days. 

Recipe Notes: To make this recipe Dairy-Free and vegan select vegan dark/white chocolate chips, and consider replacing Greek yogurt with a plant-based yogurt of your choice.
