Our world has been upended with a pandemic that has affected everything from immunity, food insecurity, food consumption, supply chain availability and economics. The pandemic has presented global nutrition challenges. Consumers have been forced to revamp their shopping, cooking and eating behaviors. Obesity and excess inflammation in the body appears to be one of the more dangerous aspects of the virus. This session will explore the emerging trends and research on the role of food and nutrition in boosting immunity and potential solutions to combat the impact of the pandemic.

Kathleen Zelman, MPH, RDN, LD

Food, Nutrition & Media Communication Consultant

Kathleen Zelman, MPH, RDN, LD is a food, nutrition and media communication consultant and owner of No Nonsense Nutrition, LLC. Recently retired as the director of nutrition for WebMD after sixteen years where she helped build a state-of-the-art food, diet and nutrition portal. She currently serves as a contributing editor to the Academy’s Food & Nutrition Magazine and is a member of the board of directors of the True Health Initiative, Inc and Nutrition4Kids medical advisory board. Zelman received one of the highest honors from the Academy of Nutrition and Dietetics, the 2016 ‘Lenna Frances Cooper Memorial Award’ in recognition of a distinguished career and remarkable contributions to the dietetics profession. In 2007, Zelman was awarded the AND “Media Excellence Award” for her contribution and commitment to educating consumers about food and nutrition, and the American Society for Nutrition (ASN) named Kathleen the 2011 recipient of their “Nutrition Science Media Award”.
